Recipe: Baked Taro Root Chips

February is American Heart Month and we're bringing you a tasty homemade snack using Taro. Taro (also called eddo or dasheen is a starchy root vegetable with a brown outer skin and white flesh with purple specks. Taro is packed with fiber, potassium, antioxidants and more; all with great benefits for your heart health.
Taro has a sweet, nutty flavor. It is lower in moisture than potatoes, yielding a crispier result when fried or baked.
Ingredients
- 2 Taro roots (DO NOT CONSUME RAW)
- 2 tablespoons olive oil
- 1/2 teaspoon of salt
Directions
- Preheat the oven to 400 degrees Fahrenheit and arrange racks to divide oven into thirds.
- Coat two large baking sheets with olive oil, using a pastry brush to spread evenly; set aside.
- Remove the ends and peel the taro root with a vegetable peeler. Slice thinly (nearly translucent), about 1/16 of an inch and place in a medium bowl.
- Add 2 tablespoons of olive oil and mix gently to coat.
- Place slices on the prepared baking sheet in a single layer without any overlapping. Sprinkle Lightly with salt. Bake for 5 minutes. Rotate the pans between racks and bake for an additional 4 minutes. Remove from the oven once the taro chips start to turn golden brown.
- Place baking sheets on wire cooling rack and season immediately with salt. Let the chips rest for 5 minutes and carefully transfer to serving dish.
Note: Best enjoyed day of baking.
