Slow Cooker White Bean Chicken Chili

Ingredients

¾ lb. boneless skinless chicken breasts, cut into 1-inch pieces

¼ tsp. salt

¼ tsp. pepper

2 Tbsp. olive oil, divided

1 medium onion, chopped

1 jalapeño pepper, seeded and diced

4 garlic cloves, minced

2 tsp. dried oregano

1 tsp. ground cumin

2 ½ cups low-sodium chicken or vegetable broth

2,15 oz. low-sodium cannellini beans, rinsed and drained

¾ cup shredded cheddar cheese

Optional toppings: sliced avocado, quartered cherry tomatoes, and chopped cilantro

Directions

1. Season chicken pieces with salt and pepper by tossing them together in a bowl.

2. In a large skillet, heat 1 Tbsp. oil over medium-high heat; sauté chicken until browned. Transfer to a 3 qt. slow cooker.

3. In the same skillet, heat the remaining 1 Tbsp. olive oil over medium heat, and sauté the onion, and add it to the slow cooker.

4. Add jalapeño, garlic, oregano, cumin, and broth to the slow cooker and stir well to combine.

5. In a bowl, mash 1 cup of beans with a fork or blend with an immersion blender or in a food processor until smooth; add to the slow cooker with the remaining beans and mix well.

6. Cook, covered, on low until chicken is tender, about 3 hours.

7. Serve each bowl with 2 Tbsp. shredded cheese and desired toppings.
