Recipe: Pumpkin Spice Energy Bites
Packed with pumpkin, oats, nuts and warm spices, these no-bake pumpkin spice energy Bites are a simple, nutritious snack that delivers fall flavor in every bite.
Capture the flavors of fall with these pumpkin spice energy bites. Made with pumpkin, dates, oats, nuts and warm spices, these no-bake bites are easy to prepare and perfect for breakfast, a quick snack or lunchboxes on the go.
Each bite is packed with fiber, whole grains and heart-healthy nutrients from pumpkin, nuts and seeds. Pumpkin also provides vitamin C and antioxidant-rich carotenoids, making this a delicious and nourishing way to enjoy a seasonal favorite.
Ingredients
Directions
1. Add old-fashioned oats, hemp hearts, chia seeds, flaxseed meal, walnut pieces, . cup pepitas, pumpkin pie spice, and dried cranberries to a food processor. Pulse the processor 5-10 times until ingredients are incorporated and coarsely chopped.
2. Add canned pumpkin, pitted dates, peanut butter, and vanilla to the food processor and process for 2-3 minutes, pausing to scrape down sides as needed; the texture should be smooth, finely ground, and sticky.
3. Pour mixture into a separate medium bowl and fold in the mini dark chocolate chips.
4. Roll approximately 28 balls, about 1 heaping tablespoon of the mixture each.
5. Place remaining . cup pepitas in a small dish and roll each ball in pepitas to coat.
6.Store in refrigerator in an airtight container.
